This breakfast specialty has made for some fond memories for those who happened to be camping with me when I decided to make it.
This is not a grilled dish, but I consider it a camping dish.
You will need:
1 camp stove (single burner), lit.
1 deep 10-inch or larger fry pan (Wipe the dirt out first.)
1 or 2 large bell peppers (any color) chopped into pieces about 1/2" square.
1 small onion, chopped into pieces about 1/2" square.
1 can diced potatoes, drained.
2 cans corned beef
1/4 stick of butter
Serves about 8 as a side dish with eggs or biscuits, etc.
1. Preheat the pan
2. Add a gob of butter
3. Add a few ounces of water
4. Add the chopped peppers and chopped onion.
5. Simmer until tender and the water has cooked off. If they are not tender when the water is nearly cooked off, add a bit of water and simmer longer. The aroma of the peppers and onions will get the stragglers out of bed.
6. Add the diced taters and the corned beef. Break up the corned beef and work it all together with your spatula. Keep turning and folding it to keep it from sticking, and to cook it evenly.
7. When it seems cooked and nobody can stand to wait any longer, serve it up with some scrambled eggs.
8. Turn off the stove. There will be no need to reheat leftovers.
