Mountain Man Breakfast

Ingredients
1 pound Bacon
1 pound ground breakfast sausage
1 large onion (diced)
2 green peppers (diced)
1 dozen large eggs
1 pound shredded hash browns
1 pound shredded cheddar cheese


In a 10 inch Dutch oven; add 1 pound Bacon (cut into thirds for size) and 1 pound breakfast sausage. Cook stirring occasionally until almost crisp. Add diced onion and green pepper and cook until mixture begins to soften. Stir in hash browns (do not drain grease) cover and let brown, stirring occasionally. Scramble 1 dozen eggs (in a gallon Ziploc bag) and pour evenly over hash browns, cover and let cook for several minutes. Once eggs are cooked remove Dutch oven from heat and pour 1 pound shredded cheese to top of mixture; cover (adding several hot coals on top of Dutch oven lid) and bake until cheese is melted. Ready to serve.

We always called that Hobo's Breakfast...good stuff, and sticks with you. Until you have to hit the bushes, anyway.

Any carbs saturated with bacon grease are good carbs. Shifty
